If there’s ever been a year to try something new for Thanksgiving, 2020 is it! Everything is so far from our usual routine, that we might as well apply that to this beloved holiday characterized by delicious food. This certainly applies to you if you’re used to only bringing a side dish to the big family gathering that is no longer this year and the entire feast is up to you. Also, no judgement at all if routine and tradition is where your heart is because you need some normal this holiday. As we’ve learned, everyone has their unique way of coping and the important thing is that you keep yourself sane!
If you’re up for trying something new, I’m going to share with you my favorite way to enjoy cranberry sauce. To be honest, I’ve never had the stuff from the can. I’m not sure if its sauce or jelly or just something fun to look at… But, I do love cranberry sauce – it’s a beautiful color that I think goes well with every Thanksgiving dish. This version from Cooking Light is more of a chunky than thin sauce and it is delicious!
Roasted Cranberries and Grapes with Rosemary (Cooking Light Magazine)
- 12-ounce bag fresh cranberries
- 10 ounces seedless black grapes (or red grapes)
- 1/4 cup maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 rosemary sprigs (or thyme)
- 1 tbsp olive oil
- 1 tbsp red wine vinegar (or balsamic vinegar)
Process:
- Preheat broiler to high.
- Combine first 7 ingredients on a jelly-roll pan; toss to coat. Broil 4 minutes or until fruit begins to brown (do not stir). Drizzle with oil and vinegar; toss gently.
If this becomes your fave too, I recommend stocking up on fresh cranberries. You can seal them in a freezer bag and store them in the freezer to have on hand for the next couple months. Then you can enjoy this deliciousness many more times.
This might be the year to swap out some of the less enjoyable-to-you side dishes – especially if your Thanksgiving is on lockdown.
